I made a luncheon meat, egg, cheese and tomato sandwich for dinner. I used Red Leicester cheese because of the beautiful orange color and it turned out to be what I was looking for. It melted beautifully and was pretty salty. I put the egg in between the luncheon meat and cheese and put diced tomatoes on top. It made the sandwich difficult to eat as the tomatoes kept dropping off. I don’t know why I decided to dice them.
