I once read about someone making an avocado scrambled eggs on a blog but I forgot where I originally read it. Anyway, the end result was a pile of really green looking scrambled eggs. I thought it was really funky and I wanted to try it even though I wasn’t a big avocado lover.
I mashed up one avocado and then mixed it with two eggs. Then I cooked them while I quickly toasted a piece of bread. I was a bit apprehensive at the first bite because I did not know how it would taste like. Even though the original blogger said it was delicious, the blogger also loved avocado in the first place. So I took the first bite and it turned out to be quite nice. It was soft and somewhat buttery. It tasted even better when eaten with some toast!
